These make a great after-school or after-workout snack! They take less than 5 minutes to throw together and are a great make-ahead treat for the week. Maybe you noticed, but we are big chocolate and peanut butter fans around here, so any recipe that incorporates both scores big points at my house!
- 1 cup organic creamy or crunchy peanut butter, or almond butter (no sugar or additives – just nuts and maybe salt)
- 1/4 cup pure maple syrup, or raw honey
- 1/4 cup almond flour or coconut flour
- 1/4 cup raw cacao powder
- 1/4 cup vegan protein powder of choice (we used Chocolate Fudge Orgain)
Instructions:
- Add all the ingredients to the bowl of your food processor then pulse until everything is fully incorporated. Scrape down the sides as needed.
- Using a tablespoon-sized cookie scoop, scoop out the peanut butter mixture and using your hands, roll them into balls.
- Place the balls onto a cookie sheet with some space in between them and refrigerate or freeze. Store in a sealed container.
- Stores well in the fridge for up to 10 days.
- Store in the freezer for up to a month.
