Watermelon Soup

This refreshing soup is great when watermelon is in-season and plentiful.  It is great as a first course or even as a dessert.  I’ve had it for a light dinner after having a heavy lunch and it is perfect!

Ingredients

  • 4 cups cubed seedless watermelon
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon chopped fresh mint (or 4 drops spearmint or peppermint oil)
  • 1 tablespoon honey

Directions

  1. Blend watermelon, lemon juice, mint, and honey in a blender until smooth. Refrigerate 2 hours before serving.  Stir right before serving – or leave it in the blender until serving time and blend it for a minute right before serving.

]Note:  Make sure your essential oils are labeled safe for ingestion!
